Happy Autumn!

Last Autumn when Lydia was 8 months old, now she is 18 months old!!

For as long as I can remember autumn has always been my favorite season, and I'm pretty proud of being born around this time of year! I love when the weather slowly begins to cool down and the leaves start changing shades of color. The smell of the air is crisp, and cinnamon sugar becomes the signature scent of my home. Everything just feels cozier. I'll be able to start wearing my fall uniform: a chunky sweater or flannel, jeans and boots. I cannot wait til I can wear boots again!! Food seems to taste better this time of year too. Winter squashes are at their peak, and boy do they taste mighty fine roasted, sprinkled with pumpkin seeds and served over kale. I also like pumpkin pie, pumpkin oatmeal, and pumpkin smoothies heavy on the spices.

There's a lot to love about this season. It seems to always inspire people to get together more whether it's to watch football (not me, I'm just there for the food), go to harvest festivals, host seasonal parties, go apple picking, etc. There's really no solid reason not to fellowship with your people when autumn is here! I am most looking forward to starting traditions with my family. I think Lydia will love jumping in freshly raked leaves, going to our towns harvest festival and helping me bake lots of delicious treats in the kitchen.

What's in our first CSA bag:


This Wednesday we picked up our first CSA of the year! CSA stands for community supported agriculture, farmers share their freshly picked crops with the community, and it's a great opportunity to promote local farmers; a win-win if you ask me! It's our third year subscribing to Brenckles and this year we are picking up the produce once a week from their greenhouse in our town. We absolutely love it because we know where our produce is coming from, eating more seasonally and often get vegetables we can't find at the grocery store! 

Here's what we got in our first bag and here are what I plan on doing with each item:
  • Garlic scapes - One of the least common items in our bag! They are those long green thingies on the left hand side of the photo and are the flower bud of the garlic plant. We usually receive them the first couple of weeks, and I remember the first time I saw them I had no idea what to do with them! Fortunately for Google, I learned that they make an excellent base for pesto and can also be used in place of garlic (though they're more mild in taste.) I am thinking of using this batch in chicken stock over the weekend and if I have any leftover maybe I'll chop some up to put into guacamole for Father's Day!
  • Kale - Anyone who knows me knows I love kale. I'm a big fan of raw kale salads especially massaged kale. I am really intrigued by this Kale Guacamole recipe. I usually keep things simple with my guacamole but adding kale into the scene is worth trying!
  • Spinach - I already made chopped spinach salad with strawberries, fresh shallot balsamic vinaigrette and poppy seeds back to back, and also added some to my smoothie this morning! I love the spinach our CSA gives us. It's so much sweeter and fresher than the stuff I find at the grocery store. My favorite ways to use it is in smoothies because it's one of the more neutral greens, raw in a salad, and it also tastes fabulous sauteed with a little olive oil, salt and pepper.
  • Strawberries - I am obsessed with these strawberries! They're perfectly sweet and ripe. So far Lydia and I have been eating them as is, in the aforementioned spinach salad, and sliced up for overnight oats. 
  • Local honey - I'm a big fan of baking with honey and will probably use it in some future desserts, drizzled in plain yogurt, sometimes on waffles, or in a timeless peanut butter, banana and honey sandwich. Mmmm!
  • Mild salsa from the farm's veggies - The salsa is made from the farm's tomatoes, onions, garlic and peppers. It is a simple little salsa but definitely not lacking in the flavor department! Chips and salsa here we come... 
I'm looking forward to the upcoming months and using these vegetables to make delicious meals. I hope you all have a beautiful weekend and Father's Day :)

Friday Love!



Just a few things I’ve been loving these days:

one // First things first, this weather is spectacular! Sure there’s been rainy days this week but it has been much warmer lately and am happy that summer is around the corner.

two // This post on respecting your body’s natural size. I found it to be such a positive, spot on and well written piece! I know I have moments where I’m feeling self-conscious with my body, and this post is all about giving yourself a break and to letting go of numbers on the scale. I loved it.

three // FitnessBlender’s FBooty Round 2. I just completed week 1! Much like the first round, this program combines pilates, HIIT, and lower body strength workouts with extra credit for a burnout round. It’s been challenging but so much fun. My goal is to strengthen my lower body and improve my balance and flexibility as well!

four// Adding a shot of espresso to my morning smoothie this week. I’ve been seeing it around the web for a few months now and finally did it! I will be posting a recipe in the near future:)

five // Buttermilk. I know it’s nothing new under the sun but I recently reintroduced some dairy into my diet, and it’s become essential for my fried chicken brine, cake and waffle batters! I've also been using any leftover buttermilk in smoothies and overnight oatmeal. From now on (unless I’m cooking for someone with dairy allergies), I will probably stop making buttermilk substitutes by curdling milk with lemon or vinegar. It just isn't the same!

six // This black "coconut ash" ice cream. I wouldn't say I love it because I haven't tried it but it intrigues me immensely. It's coconut flavored and has activated charcoal in it. Hmmm thoughts? 

seven // Last but certainly not least, my new cacti family. They were a Mother’s day present from Michael:) Phoebe resides in the kitchen while Georgie hangs out in the living room. Aren't they cute?

Lydia Renee { Birth Story }



Lydia Renee was born St. Patrick’s Day in Pittsburgh, Pennsylvania. Her time of birth was 7:29pm and she weighed 6lbs. 13 oz. and measured at 19 ½ inches. Upon gracing us with her presence she gave a little cry and immediately began sucking her little fingers; Lydia was then passed to her mama where she was held closely onto my chest.

Before this joyous moment, Michael and I endured a long labor that began Monday morning at around 2am. I was just two days shy of my due date and I was awakened to what felt like menstrual cramps, I felt a surge of excitement believing that my body was in the beginning of going into labor. Just to be certain and to gain a little reassurance, I called the midwives’ office and left one of the receptionists a message explaining my symptoms. Not too long after that, I got a phone call from one of the midwives and was told I was in early labor, to rest up and to give them a call when the contractions are five minutes apart.  Michael decided it would be best to take the day off and I began adding last minute toiletries to our hospital bags. To distract ourselves we went to Walmart, Costco and an old time-y candy store in our town that I've wanted to check out since we moved here. We ended up buying lots of chocolates! During these errands, I would feel cramping every fifteen minutes or so, and they would last around 30 seconds.  I was elated and hopeful our daughter Lydia would be here sooner than later!

The cramps had not progressed until much later when Michael and I went to sleep at around midnight. I started to struggle to find comfort and needed to get out of bed. I walked around the house a few laps, went to the bathroom, bounced on my exercise ball and eventually took a shower. Let me tell you, the shower provided the most relief; though, I knew I couldn't stand in there forever. I continued to bounce on the ball which also provided great relief. The cramping began coming closer to together and I began timing them. They were five minutes apart and lasted 1 minute. I woke up Michael and he said we should just go to the hospital, the worst thing they can do is send us home. So we packed our bags, the car seat and got gas, hopeful that we’d return home with Lydia.
The drive to the hospital had been pretty uncomfortable… Michael tried his best by distracting me and bringing up irrelevant conversation. I of course, did not say much in the moment of a contraction! Once we arrived at the hospital, I filled out some paperwork and went into triage where a nurse lectured us that we should have called before coming in. After a few minutes of being lectured, we waited for one of the midwives to check me and determine whether I would be admitted or not. We learned that I was 4 1/2cm and that I would be admitted. Upon waiting for our room, I began feeling overwhelmed by a swirl of emotions making my whole body tremble and enough to stall my labor… I learned during our birthing classes and Ina May’s Guide to Childbirth that sometimes going to the hospital can often build up nervous feelings which can potentially slow down labor; looking back, I believe that’s what happened to me!

After getting admitted into the Labor & Delivery room, I was hooked up onto an IV filled with penicillin (I tested positive for Group B strep).  Michael and I spent a good course of the morning watching TV. Every 45 minutes for 15 minutes a nurse would come in to check the baby and my heart beat. Michael was able to nap, eat breakfast and I tried to sleep in between what became irregular contractions. At around 11am, another midwife started a shift and told me that she would check me in about an hour to see if things were progressing, if not she would give me the option of breaking my waters in effort to help speed things up. An hour passed and she told me that I was only 5cm; so I let her break my waters and she said I was now 6cm.

A couple hours passed and after having my water broken, I was leaking but not at all experiencing the intense contractions I had imagined. One of the nurses let me know that I was not in active labor and I would need Pitocin and probably an epidural. I didn't want either! The midwife came back to see how I was feeling, and said I should go walking for 45 minutes and if things don’t pick up at that point, I would need a small dose Pitocin to get things moving. I remember feeling scared and doubting my ability to get through this without compromising my birth plan. But Michael and I spent the next 45 minutes walking around the ward and by the time we came back I still didn’t feel much change in the contractions.

It came down to me needing the small dose of Pitocin and as hard as that was for me to accept, I am glad I finally was making progress. Within the next hour at around 5pm, I was in active labor and prayed for strength during each contraction; I decided from that point on, I would brave it out and let my body feel each wave of contractions. I told Michael to play some worship music which eased the tension in the room. By the next hour I wasn't talking much and bouncing heavily on the birthing ball. Michael kept reassuring me that I was doing so well and to squeeze his hand if I needed to. One thing I remember being bothersome but necessary was the continuous fetal monitoring that comes with Pitocin; fortunately the nurses were kind enough to let me bounce on the ball while they checked my belly for Lydia’s heart rate.

A new midwife came in while I was bouncing on the ball and told me to call her when I felt the sensation of needing to go to the bathroom; that should be a clear sign that I am ready to push. One of the nurses encouraged me to pee before that time came and I remember needing help walking over to the bathroom but nothing would come out. They then walked me back to the ball and I started to feel that sensation at around 6:25pm. I asked if the midwife could check me and see if I was ready to push. I wasn't. But I was close, she could feel Lydia’s head more now and I was 8cm but my cervix wasn't completely thinned out. She said she’d check back at 7:30pm. I’ll admit I felt a little defeated and didn't think I could hold off that long so I prayed that I could get through the intense urge to push. I managed to hold off a little bit but by 6:50pm or so I couldn't bear the sensations, I needed this child out of me!

I told the nurse I was ready and she said she would let the midwife know. I remember saying to Michael “where is she? How I hope she comes soon… ah, I can’t stand this any longer!” Finally the midwife came into the room and I was told to go on the bed. She checked me and said my cervix was completely thinned out. Hallelujah! I thought to myself with a smile (everyone was shocked I was still smiling at this point) as I battled the contractions that were now overlapping. She gave me a few options of pushing: squatting, lying on my side or on hands and knees. I opted for lying on my side which required me to hold onto my left knee and Michael holding onto my right knee. They turned on bright lights and she told me to inhale through the contraction and to exhale to push. She allowed me to push when I felt necessary and to take a break if I needed it.

I started pushing at 6:59pm. They began to feel Lydia’s head and I was able to feel her too, which motivated me to continue pushing with all my might. It was the most amazing feeling, knowing how close I was to meeting Lydia. This is the part of my labor where I let go and made noises as I pushed. The midwife surprised by how fast things were happening quickly put on her gown and told me that I was going to feel the ring of fire as I pushed her head out of me. AND boy, did it burn like a ring of fire! Instead of fearing the pain much like I thought I would, I just pushed and pushed through the burning sensation; looking back I thought of it as finishing the last rep of a heavy set at the gym, it was all about mind over matter. Once her head was out, I was instructed to slow down so they prepare to catch her and suctioning her mouth. And after her little shoulders were out, she slipped right out! She was born at 7:29pm. I was in awe as I looked at her and then saw how stunned and overwhelmingly joyful Michael’s face had been at that moment. He got to cut her umbilical cord and Lydia was then placed onto my chest where I closely cuddled with her and stared at her amazement, with a huge sense of relief and a good dose of euphoria too. I quickly delivered the afterbirth and they told me that I had a “nice” 2 degree tear and would require stitches; thankfully I was too distracted by Lydia to be afraid of them sewing me up. I allowed Michael to hold her and they weighed her and checked her measurements. I got to breastfeed her for the first time which actually felt more natural than I thought, not unusual at all and while I initially needed assistance from the nurses, I knew at that moment I wanted to be Lydia’s source of food and of course overall comfort.


The stitching procedure took a little over an hour and by the time they were finished repairing me, I was starving! I ate some granola that I brought from home and really wanted something more substantial; I did give birth a couple hours ago after all…  So Michael suggested Jimmy John’s which I had never had before and was excited to try since I hadn't had a sandwich with cold cuts since getting pregnant. I told him to get me whatever he was getting and he brought us roast beef with tomato, a little mayo and lettuce; I may had been famished but man it was possibly the best sandwich I've ever eaten!

Overall my birth story stuck to the heart of my plan. Aside from having my waters broken, getting Pitocin and having continuous monitoring, I feel blessed to have experienced such a life changing event! In more ways than one labor drew me closer to God because it required me to be patient, still and trust in the birthing process He designed my body to go through. I also knew I was in good hands with the midwife and hospital staff, they did an amazing job taking care of me and baby Lydia.

As far as my recovery goes, I am now three weeks postpartum and I’m starting to finally feel myself. The first week was the toughest, as I was uncomfortable and a little overwhelmed. Caring for a newborn and dealing with physical discomfort could have been harder but I am SO thankful Michael had the first two weeks off! He is back at work and last week I had my first day with Lydia all by myself; I managed to prepare Michael and I's dinner, clean the kitchen and bathroom and shower all while she took a nap! It’s the little things that keep us going, am I right? My parents just came on Saturday and are going to be helping us out for the next week and a half; they've been getting much needed family time with us and their first granddaughter Lydia! That's all I have for right now but I'll be posting more Lydia updates and a postpartum update as well. :)

A Recap of 2014 and Goals for 2015

This blogpost is somewhat overdue since most people usually share their previous year and/or New Year’s resolutions in the beginning of January and not in the end of January. While I have been loving pregnancy, it has taken a toll on not only my body but my mind and that being said I’ve been having a hard time writing a decent set of sentences. Anyway… last year was a challenging but good year for both Michael and I; and I know this year will without a doubt have its own joys, challenges and adjustments.

Here’s a little recap from last year:


-We moved from New Jersey to Western Pennsylvania in early March which was a huge adjustment for me. The first couple of months were especially challenging due to the fact that I was so far from my family and church. I really missed seeing familiar faces and places; my homesickness was painful and hard to shake off. My in-laws really helped by making me feel comfortable and loved in their home, and for encouraging me through this difficult time; which I’m so grateful for.

-My car Lady Azul stopped working and I became accustomed to driving Michael’s Subaru Forester Jorge. I don't know where these Spanish names came from but they stuck for good.

-Zoe the Frenchie became a part of our lives in March and now she’s officially the queen of our house! Since I haven’t been working outside of the home she’s been such a joy in my life and of course a pain in my rear but I wouldn't change her spunky and stubborn bulldog personality for the world. She’s family!


-After a long and stressful house hunting experience, Michael and I bought our first home in May! House hunting was a challenge but after investing time into looking for homes we were able to pinpoint what we truly wanted in a home. After a couple of letdowns we found what we were looking for and our offer was accepted! We moved in the first weekend of June and have been slowly growing into our two-story house just north of Pittsburgh. It’s been really fun actually!


-We joined a C.S.A, (Community Shared/Supported/Sourced Agriculture) with a local organic farm in Butler that started in spring and ended in late autumn. Subscribing to a C.S.A. not only helped us eat more seasonally but it was a wonderful opportunity to support a local business and familiarize us to vegetables we’ve never used before such as garlic scapes and kohlrabi. Each Thursday was exciting because we would receive a new bag of produce and we’re looking forward to start again this upcoming spring!

-We began attending Harvest Bible Chapel in Wexford and soon became involved with serving and going to small group regularly. HBC has been a huge blessing for both of us and we’re so happy to be a part of it.


-I got to make and consume a lot of homemade dairy-free ice cream all summer long! My favorite flavors were roasted strawberry and mint chocolate chip. Just take a look at that melting shot above. Mmm!

-One day in July, I wasn't feeling myself while I was exercising and began to feel cramps in my pelvis. Because I make an effort to always listen to my body, I decided to take a pregnancy test at the end of the week. The test responded with two faint lines and not being too certain I decided to wait it out because my period wasn't due for another week. I told Michael and he was leaning more towards me being pregnant than not, but I was still in denial. I took more tests periodically and they were all positive. I still wasn't 100% convinced until I missed my period! Both of our initial shock has been replaced with overwhelming joy and excitement. I learned from this experience that just because a pregnancy isn't planned doesn't make it any short of a blessing or a miracle for that matter!


-I became a Titi to the sweetest and most adorable little boy ever! My sister gave birth to her son DJ on August 11th. I am not over exaggerating when I say that I love that little monkey with a great portion of my heart! It amazes me how much love people can have for each other and I can't even imagine how much love I'll have for Lydia when she's here. (I already love her!) Sometimes it makes me sad that Aria and I live such a great distance and that Lydia won't be able to see DJ as often as we'd both like. But we will work it out!

-Michael and I celebrated our first year of marriage! On our anniversary we went on a cruise to the Bahamas, St. Thomas and St. Marteens. It was relaxing and fun people watching experience. The highlight of the trip was the hidden self-serve frozen yogurt station by the pool!

-We hosted our first Thanksgiving in our new home! It was a lot of work but thankfully my parents stayed the week, and were able to help us prepare for the holiday and everything came out delicious too. : )

-Michael resurrected my car after nine long months of trial and error. I reunited with Lady Azul just in time for Christmas!

-Speaking of Christmas, 2014 was the first year I broke traditions by spending the holidays in Western Pennsylvania with Michael’s side of the family. Next year we plan on going to Jersey and hope to take turns each year.

Now that we’re in the thick of January here are some goals I’m hoping to fulfill this year:

-Read, study and learn more; whether it’s biblical studying, novel reading or even short stories, I hope this year I’ll fill my head with knowledge, wisdom and information that is most important to me. It’s so easy to get wrapped up in my phone and neglect my brain from getting the nourishment and fulfillment it desires!

-Photograph and share successful recipes that I've been developing on the blog; such as cookies, pierogis, soups and even Puerto Rican inspired dishes. Last year I truly fell short of this goal but I really, really want to make an effort in documenting recipes and capturing them through my camera rather than my cellphone.  I know the more recipes I share; the more inspired I’ll be to write more!

-Go on more small but lovely adventures with Michael before Lydia is born. I know her arrival will be anything but the end of the world, but at the same time she will require much if not all of our attention in the early stages and I want to use these next couple of months to spend lots of quality time with him. I mean he is my favorite person after all… I think going on day trips, finishing up some house project, going to the gym and indulging in cuddling would do just the trick!

-Make an effort to be a friend. I believe myself to be a nice person and all but I've been so reserved for so long that I haven’t allowed myself to make any friends. I know this is something that not only affects me but also affects Michael. He wants me be able to hang out with other women and to freely share passions, interests and ideas with. As much as I love being alone, I still crave long lasting friendships. Don’t we all though? As an introvert this is my goal EVERY year. But I hope that this year will be different for me, and that I can be more outgoing and willing to be a friend to others.

-I mentioned my cellphone in 1 & 2. I hope to pick up my phone less and I know this is one of those things that are easier said than done. It’ll actually require self-discipline! I think that naturally Lydia will help me reach less for my phone but I definitely want to make it a priority so that I can keep her and Michael as my main focuses.

-Write more on this blog. Write more on this blog. I’ll type it again, write more on this blog! I need to seriously make a schedule for myself to follow because whatever I’m doing now isn't working. My current content is totally inconsistent and not getting me very far at all.  I hope and pray that by setting a blogging schedule that I will fulfill my blogging goals and potentially establish more viewers that aren't just my parents and husband!

Currently these are all I can muster at the moment but I’m sure more goals will come to mind as this year progresses. In the meantime I won’t be placing too much on my plate since I’ll be a mom in two months! My goal right now is to enjoy life, continue carrying a healthy baby and accepting whatever challenges that will come after our Lydia is born. I’m confident that this year won’t be easy but all my trust will be placed in God. He will equip the both of us with love, patience and everything else new parents so desperately need. I’m not worried just excited and anticipating this next journey in our lives!

Wedding Daydreams

Michael and I are getting married on November 2nd of this year and each time I remember that, I can't help but feel incredibly fuzzy inside! There's a lot of things I could say about how excited we are but words can't even describe it. The truth is Michael is my world, best friend and has been such an undeserving gift from God. I wouldn't change a thing about him. When he proposed to me, I was so joyful and I totally made a wedding Pinterest board that following week... I mean I always secretly loved wedding magazines and shows, and often used the excuse that I was doing looking/watching them for Aria. Side note// In case you didn't know, my older sister Aria is getting married on August 16th, and we are each others maids of honors! I'm sure you would get a headache from listening to all the wedding speak that's discussed in my house. It may be a bit hectic for my parents but they couldn't be happier for us both.

As for as my own wedding planning goes, I wouldn't classify myself as the little girl who daydreamed of her wedding. But I will admit that my daydreams hit an all time high shortly after Michael proposed! I believe weddings should represent who the couple is, having a wonderful time with your guests and not so much what the trendy thing to do is. Fortunately Michael and I have been in synch with our planning, and together we've been staying true to a romantic but quirky, rustic and vintage inspired theme. It'll be an effortlessly elegant affair colored with earthy tones, purple and burnt orange. There will also be games, personal touches, our own playlist and delicious + seasonal food. So far everything is coming together beautifully, our website is complete and we are officially honeymooning in Cazadero, California! What's left over is our invitations and a few d.i.y. projects here and there, which may or not be a lot of work, though we're blessed to have plenty of assistance. All and all our planning has been going smoothly, so smooth that we'll be able to enjoy our summer with ease. Which makes me happy! :)

Smoothies, mmm.



Once upon a time there lived a girl who cringed and laughed at the idea of drinking a smoothie that was dark green; it simply made no sense and it looked very peculiar to her. That same girl didn’t know that chia seeds were possibly the coolest and nutritious little seeds out there, and that frozen bananas can mimic the consistency of soft serve ice cream… She was a poor unfortunate soul indeed. In 2010 this girl’s life was changed the minute she was exposed to the blog world. Yes, she credits most of her lifestyle change to some of the best health blogs out there: Oh She Glows, My New Roots and The Sprouted Kitchen, just to name a few. If you haven’t caught on by now, that girl was me and I feel like these lady bloggers have helped make eating wholesome meals an exciting experience for me. They share their stories through awesome photography and encourage sharing their foods with family + friends, much like myself!  I’ve definitely become a bit obsessed passionate about cooking and photographing food, and excitingly sharing it with others. I've always loved to cook but never thought I'd be so enthusiastic by sharing the quality, beauty and taste of real food. Real food = unprocessed foods often eaten wholly and prepared with a whole lot of love! I believe that food is best eaten when it’s made with love and shared with your favorite people.  And lately I’ve been so inspired to document my own experiences cooking and love for serving others with food through my blog.  I hope that’s okay with you guys!

Now that I’ve got that off my chest, let’s go back to what I said about green smoothies. It’s crazy to think about how close minded I was when it came to nearly everything. Food, music, people, movies... You name it. During my narrow minded phase I thought dark leafy greens belonged in my salad or on the side of my dinner plate, not blended with fruits and eaten with a spoon from a coffee mug. Yes you heard that right, I prefer my smoothies thick and eaten in a mug with a spoon… It’s comforting! Anyway, the idea was weird but once I finally tried it, (among other foods that I thought were weird but now love ) I became hooked and consume a green smoothie at least every other morning!

 In glory of green smoothies here is an interchangeable recipe that's very dear to me:

 Customizable Green Smoothie

  • 2 generous handfuls of organic spinach leaves, collard greens or kale
  • ½ cup plain yogurt (dairy-free, goat, greek, etc. use what you like best!)
  •  ¼-1/2 cup milk of choice or natural fruit juice (add less or more depending on your desired thickness)
  • 1 frozen banana, peeled and cut into slices (this adds creaminess but if you do not like bananas try mangoes or watermelon) 
  •  ½ cup frozen fruit of choice (strawberries, raspberries, blueberries, cherries, blackberries, melons, watermelon, mango, pineapple, kiwi, etc. Honestly, whatever you dig and whatever is season where you live!)
  • Healthy Fat of Choice (ie: ½ haas avocado, 1-2 tablespoons nut butter or coconut oil. The fat really balances out the smoothie and I don’t recommend leaving it out. Adding avocado to smoothies is a personal favorite of mine, it lends a very velvety texture!) 
  •   Optional add-ins, such as: chia seeds, ground flax, hemp seeds, cacoa, protein powder, spirulina, maca powder or bee pollen.

 Blend away in a high speed blender and enjoy!
